Remove NM if you want dhcpcd, yes. But if you don't care about dhcpcd and are happy with the Bookworm defualt DHCP client (whatever that happens to be) you can just install ifupdown and configure via /etc/network/interfaces[.d]. That's not installed by default but NM is configured by default to ignore all interfaces configured that way so there's no need to remove NM.Side note:
If you really want old style networking, you can of course remove NM and go back to dhcpcd.
